Apple Spice Cake- Vegan, Gluten-Free

Muffin

  • 1 cup oat flour
  • 1 cup sorghum flour
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons flax meal mixed with 6 tablespoons of water
  • 1/4 cup unsweetened apple sauce
  • 1/2 cup organic grade B maple syrup
  • 2 tablespoons coconut oil
  • 1/3 cup nut milk

Apple Filling

  • 1 and 1/2 1 inch chopped apples
  • 1 tablespoon cinnamon
  • 1 tablespoon grade B maple syrup
  • 1 lemon squeezed

Topping

  • 1/2 cup chopped oats
  • 1/2 thinly sliced apple
  • 1 tablespoon coconut oil
  • 1/4 teaspoon salt

Instructions:

Pre heat the oven to 350 degrees.

  1. Combine all the apple filling ingredients and cook on the stove in a pot over medium heat until the apples are soft, stir occasionally, about 5 minutes.
  2. Mix the flax meal and water in a small bowl, set aside.
  3. In a large bowl, mix all the dry ingredients, then add the rest including the flax meal.
  4. Add the apples from the pot, stir.
  5. Place the batter in a greased bread pan and put in the oven for 5-7 minutes.
  6. In the meantime, thinly slice the 1/2 apple and mix them in a bowl with the chopped oats, salt cinnamon and coconut oil.
  7. Take the bread out after the 5-7 minutes and place the apples in the center of the bread, sprinkle the crumb topping all over the top. Place the bread back in the oven for another 20 minutes until baked, test with knife through the center.
  8. Take out and let cool.
