Apple Spice Muffins, Vegan, Gluten-Free

Prep Time: 10 minutes

Ingredients:

  • 1 cup almond flour
  • 1 cup oat flour
  • 1 flax egg (1 tablespoon flax meal with three tablespoons of water)
  • 1/3 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup unsweetened nut milk
  • 1 tablespoon coconut oil
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • dash or two of allspice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans
  • 1 cup chopped apples with 1 tablespoon lemon juice, 3-4 dashes of cinnamon, and a drizzle of maple syrup.

Topping pecan

Topping:

  • 1/2 cup chopped pecans
  • 1/3 cup almond flour
  • 1/3 cup coconut sugar
  • 1 tablespoon vanilla extract
  • 2 tablespoons coconut oil
  • 1-2 tablespoons maple syrup
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions:

Pre heat the oven to 350 degrees.

1) Chop the apples into one inch long, 1/2 inch thick cubes and place in a pot on the stove along with the  lemon juice, cinnamon and drizzle of maple syrup over medium heat. Stir occasionally until tender (about 7 minutes). Remove from heat, set aside and let it cool.

2) In a small bowl, mix the flax meal with the water and set aside.

3) In a mixing bowl, mix the dry ingredients of the topping, then add the coconut oil, maple syrup and vanilla until the texture is a crumble. Set aside.

4) For the muffin, mix all the dry ingredients together in a large mixing bowl.

5) In a small bowl, whisk together the vanilla, maple syrup, and oil. Add this to the dry ingredients.

6) Add the nut milk and flax egg to the batter and mix thoroughly.

7) Add the cooled apples from the pot and mix.

8) Fill your muffin holders 3/4 of the way full, then sprinkle the topping so the top of the muffin is covered.

9) Place in the oven and bake for 30 minutes.

10) Take out and let cool for about 20-25 minutes.
