Ingredients:
Base:
- 1 cup pecans
- 2 cups rolled oats
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/2 cup unsweetened shredded coconut flakes
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup coconut oil
Filling:
- 3 apricots,
- 2-3 dates
Topping:
- 2 cups rolled oats
- 1/3 cup hemp seeds
- 1/4 cup chia seeds
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cardamom
- 1 tablespoon maple syrup
- 1/4 cup coconut oil
Instructions:
Preheat the oven to 350 degrees.
1. Place all the base ingredients in a food processor and pulse until a dough starts to form. Put the contents in a 9×9 baking dish, cover it with parchment paper and press it firmly and evenly down so it is packed.
2. Put the filling ingredients in a blender and puree. Pour the content over the base, spread evenly.
3. Place the topping ingredients in a food processor and pulse until its crumbly. Sprinkle over the top of the apricot puree.
4. Put in the apricot bars in the oven and bake for 20 minutes or so. Take them out and let them cool in the refrigerator so the bars solidify. Cut into squares.
