Blueberry Muffins- vegan, gluten free

Ingredients:

  • 1 cup of oat flour
  • 1 cup of millet flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 3 dashes of nutmeg
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1/3 cup organic grade be maple syrup
  • 1/3 cup unsweetened apple sauce
  • 1 tablespoon lemon juice
  • 2 tablespoons coconut oil
  • 1 heaping cup of organic blueberries

Topping:

  • 1 cup of rolled oats
  • 1 teaspoon coconut oil
  • 1/2 teaspoon cinnamon
  • 1 pinch of salt
  • 2 tablespoon organic maple syrup

Instructions:

Pre heat the oven to 350

1. Mix all the dry ingredients in a large bowl.

2. In a small bowl, stir the chia seeds and water until it becomes thick. Add it to the dry ingredients.

3. Add the vanilla, maple syrup, apples sauce, coconut oil and lemon juice. Stir.

4. Toss in the blueberries and mix.

5. Scoop the batter into muffin cups, fill to about 3/4 full. Place in the oven and bake for 15 minutes, rotating the try 180 degrees after 9 minutes.

6. Mix all the ingredients to the topping together in a small bowl. Set aside.

Option to scoop a thing layer of the oat topping on the tops of each muffin 10 minutes after they have gone in to the oven, Bake for another 5-7 minutes.
