Ginger Snaps! (vegan, gluten free)

Ingredients:

2 cup Bobs Gluten Free All Purpose Flour
1 cup organic coconut palm sugar (plus to roll cookies in)
1/4 cup organic molasses
3/4 cup organice coconut oil
1 tbl organic ground flax meal
3 tbl warm water
1/4 tsp salt
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
2 tbl freshly finely grated ginger
2 tsp all spice
Directions:

Pre heat the oven to 325. Mix the flax meal and warm water in a small bowl to a paste, set aside. Combined all the dry ingrediants and stir thoroughly. Add molasses, oil, and flax meal paste, blend. Roll the dough into small balls and roll them in sugar. Place the balls on a cookie sheet and lightly press an x shape onthe cookies with a forlk. Place the tray in the oven, and repeat! Let the cookies cool for 5 minutes and enjloy!!

Coconut oil is a beauty food, and the palm sugar is a lower impact on your blood sugar. Who needs gluten when these cookies taste as good as my Mothers, and anyone who has had my mothers cookies may be shocked to find!
