Gingerbread Cake- vegan, gluten free

Prep Time: 10 minutes

 

Ingredients:

  • 1 cup oat flour
  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1 tablespoon cinnamon
  • 1 1/2 teaspoon ginger powder
  • 1 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup grated ginger
  • 1/3 cup molasses
  • 1 teaspoon vanilla extract
  • 1/3 cup baked sweet potato
  • 1/3 cup coconut oil
  • 1 cup nut milk

Instructions:

Preheat the oven to 350 degrees.

1) In a bowl, mix all the dry ingredients together.

2) In a separate bowl, whisk/mash together the grated ginger, molasses, sweet potato, vanilla, coconut oil and nut milk.

3) Add the wet ingredients to the dry and mix thoroughly until smooth.

4) Pour the batter into an oiled baking dish and bake for 30 minutes. Stick a tooth pick in the center and if it come up clean, its done!
