Kale Smoothie in a New York Minute

 

NYC Marathon

Maybe it’s ’cause I’m from New York and know the value of a minute.  In New York, if something takes longer than 5 minutes, you’re obviously from “outta town,” and I’m “outta here.”

What I learned from NYC is that moving at that rapid pace all day from the moment you fall out of bed (yes, I fall), you need to have something to run on—some kind of energy, fuel.  But what kind of fuel?  I couldn’t afford the crashes from chemical energy drinks or coffee.  I had to be thriving and glowing in the career I was pursuing.
It started by accident when, startled by an over-zealous alarm clock, I “fell out of bed” and into a hijacked kitchen—cupboards bare, pantry empty—as if hungry thieves had ransacked the place during the night.  I rounded up the usual suspects:  myself and my lack of grocery shopping time!

A frantic search produced exactly 1 banana, some kale, a nearly empty jar of almond butter, and water.  I looked at the clock—late again!  PANIC!
How could I Macgyver that into breakfast?  Looking, looking, looking … BLENDER!  Everything went in, blender went to town (very loud—hope no one was sleeping), I poured it in a glass, and ran to the subway dreading what might possibly taste like dinner and dessert in a single gulp.

 

I squeezed into the train, took a breath … and then chugged it.
My shriek of delight startled this poor man sitting next to me reading The New Yorker.  Who knew my thrown-together smoothie would be so buttery and sweet—a perfect, impromptu, nutritionally-packed breakfast!
Later I went shopping and bought some almond milk to give it more flavor and that creamy texture.
This happy accident turned out to be a great base to build on, and it’s fun to be creative, so I added some celery, and flax meal, and topped it off with goji berries!  YUM!!
Now I’m on the left coast, so I no longer live by the “New York minute,” but whenever you’re pressed for time … there’s no breakfast better (or faster) than a kale and whatever’s-healthy-and-handy smoothie fresh out of your blender.
