Taco Meat-Vegan, Gluten Free

Prep Time: 10 Minutes



  • 1 cup cooked black lentils
  • 1 cup diced mushrooms
  • 1/2 cup diced red and yellow peppers
  • 1/2 cup fresh cilantro
  • 1/4 cup chopped onion
  • 2-3 garlic cloves
  • 1 tables spoon organic tomato past or 1/4 cup fresh chopped tomatoes
  • 1 tablespoon cumin
  • l tablespoon nutritional yeast
  • 1 teaspoon chili powder
  • 2-3 dashes of cayenne pepper
  • 2-3 dashes paprika
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • squeeze of lime


1. In a skillet over medium heat, saute the garlic and onion till fragrant.

2. Add the mushrooms and peppers, cook for another 2-3 minutes.

3. Mix in the lentils and spices.

4. Transfer the mixture to a food processor or blender, add the nutritional yeast, lime and cilantro, blend till chunky and resembling taco meat.

Serve over arugula, avocado, cherry tomatoes, and cucmber.  Squeeze lime over the salad and add salsa. Enjoy!
