Vegan Gluten-Free Pancakes

Ingredients:

Pancakes:

  • 1 1/2 cups oat flour
  • 1/2 teaspoon baking soada
  • 1/2 teaspoon salt ( add more if you want)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamon
  • pinch of nutmeg
  • 1 tablespoon ground flax meal mixed with 3 tablespoons of water (can also use an egg)
  • 1 1/2 tablespoons coconut oil
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup almond milk (any milk will do)

 

Maple Apple Compote:

  • 1 large juicy apple chopped into 1 inch pieces
  • 1 tablespoon vanilla extract
  • 1 tablespoon maple syrup
  • 1 tablespoon cinnamon
  • 1/4 cup water

Instructions:

  1. Put all the ingredients of the Maple Apple Compote in a pot on medium heat on the stove and let cook. Stir occasionally. Turn heat off when the liquid has evaporated and the apples are soft. Cover to keep warm. You can let this cook while you make the batter.
  2. Mix the flax meal and water in a small bowl, set aside.
  3. Place all the dry ingredients in a bowl and mix.
  4. Add the flax meal, coconut oil, vanilla, lemon juice, and almond milk to the dry mix and stir thoroughly.
  5. On a skillet over medium heat (either non-stick or melt coconut oil in the pan to coat it) pour the batter in a circular shape and watch until small bubbles form all over the batter. Flip and cook the other side for a few minutes.
  6. Transfer to a plate, feel free to melt some coconut oil over the pancakes, top with the Maple Apple Compote, drizzle maple syrup over it and enjoy!!
